Herby Avocado Whip

This right here is where it’s at! It’s the perfect dip, spread, dressing, you name it! I use a dollop on breakfast quesadillas, thin it out for a to-die-for salad dressing, use it as a dip for veggies, a sauce for pasta salad, really anything! It’s just one of those holy grail magic sauces you want to keep in your back pocket, ready to whip out when you need a little pick me up! I present to you… Herby Avocado Whip!

Makes about 1 cup.

Total time: 10 minutes

Ingredients:

  • 1 ripe avocado

  • Juice of 1 lime

  • 2-3 tbsp water

  • 5-6 sprigs of cilantro, stems in tact

  • 5-6 sprigs of parsley, basil, or any other tender herb with stems in tact

  • 1/2 tsp salt

  • 1/2 tsp pepper

Instructions: Add add ingredients to a high powered blender (I used a magic bullet), and blend until smooth. There is no need to cut the leaves off the herb’s stems because you won’t even notice them in the recipe. They contain a lot of flavor, and it is a great way to use them up! Add more water 1 tbsp at a time if necessary. Taste, and season with more lime juice, salt, and pepper if needed. This has finished blending when it is a creamy, whipped consistency.
