Healthy-ish One-pot Jambalaya

Bangin’ flavors, easy cleanup, and it’s healthy? Count me in!

Serves: 2-3 People

Prep Time: 10 minutes

Total Cook Time: 40 minutes

Ingredients:

Instructions:

  1. Heat 10-12 inch skillet to medium-high, add sausage, and brown for about 4 minutes per side.

  2. Turn heat down to medium and add in onions. Cook, stirring occasionally until softened, about 5 minutes.

  3. Add asparagus, cherry tomatoes, chicken broth, pureed tomatoes, garlic, red pepper flakes, cajun seasoning, 1/2 tsp salt, 1/2 tsp pepper, and right rice. Stir until well combined.

  4. Cover your pot and bring it to a boil. Once boiling, turn the heat down, and simmer for 8 minutes.

  5. Remove the lid, stir, and then add your shrimp to the top of your rice dish. Sprinkle with remaining salt and pepper.

  6. Turn heat back up to medium heat and cook shrimp and rice mixture for an additional 5 minutes, or until the shrimp are pink and cooked throughout.
