Healthy-ish One-pot Jambalaya
Bangin’ flavors, easy cleanup, and it’s healthy? Count me in!
Serves: 2-3 People
Prep Time: 10 minutes
Total Cook Time: 40 minutes
Ingredients:
1 package of Aidells Cajun Style Andouille Sausage, cut on the bias
1/2 yellow onion, chopped
1 bunch of asparagus (about 2 cups), trimmed and cut into 2 inch pieces
1 c cherry tomatoes, cut in half
3/4 tsp salt
3/4 tsp pepper
1 c chicken broth (I love Pacific Foods Free Range Low Sodium Chicken Broth)
14 oz canned tomatoes, pureed (Use a high quality can like Tuttorosso)
1/4 tsp red pepper flakes
1/4 tsp cajun seasoning (I love McCormick’s Cajun Seasoning)
2 cloves of garlic, minced
1 package of Right Rice, Spanish Flavor
10-12 shrimp, peeled and deveined
Instructions:
Heat 10-12 inch skillet to medium-high, add sausage, and brown for about 4 minutes per side.
Turn heat down to medium and add in onions. Cook, stirring occasionally until softened, about 5 minutes.
Add asparagus, cherry tomatoes, chicken broth, pureed tomatoes, garlic, red pepper flakes, cajun seasoning, 1/2 tsp salt, 1/2 tsp pepper, and right rice. Stir until well combined.
Cover your pot and bring it to a boil. Once boiling, turn the heat down, and simmer for 8 minutes.
Remove the lid, stir, and then add your shrimp to the top of your rice dish. Sprinkle with remaining salt and pepper.
Turn heat back up to medium heat and cook shrimp and rice mixture for an additional 5 minutes, or until the shrimp are pink and cooked throughout.
