Spicy Sausage and Broccolini Pasta with Homemade Bread Crumbs

This dish is one of our favorite meals to make. It is very simple, hearty, and has a ton of great flavor! We usually make this with chickpea pasta to make it on the lighter side. Our favorite brand is Banza, and you can find the exact box I used here.

Makes enough for 4 people.

Prep Time: 10 minutes

Total Cook Time: 15 minutes

Ingredients:

For the Pasta

  • 1 box of pasta

  • 3 slices of thick cut bacon, sliced into thin strips

  • 3 1/2 oz hot italian sausage, casing removed

  • 16 oz broccolini, stems and florets finely chopped

  • 2 garlic cloves, thinly sliced

  • olive oil

  • kosher salt

  • fresh cracked black pepper

  • fresh basil (optional garnish)

  • fresh parmesan (optional garnish)

For the Breadcrumbs

  • Loaf of rustic white bread, torn into 1 inch pieces (until you have about 1 cup of bread)

  • 2 Tbsp olive oil

  • kosher salt

Instructions:

  1. In a large stock pot, boil heavily salted water. When boiling, add pasta and cook according to package directions. Drain when ready.

  2. Heat a large skillet over medium high and add bacon and sausage. Chop sausage into small pieces and stir occasionally. Cook bacon and sausage for 12 minutes, or until well-browned and crispy. Remove bacon and sausage from skillet and set aside (reserve fat in skillet).

  3. Turn heat down to medium, add chopped broccolini and 1/4 tsp kosher salt to the skillet. Saute broccolini for about 10 minutes until softened, then add sliced garlic. Saute for an additional 5 minutes.

  4. In a separate small skillet, add torn bread and about 1 tablespoon of olive oil over medium-high heat, tossing frequently, until crispy and golden brown, about 5 minutes. Season with kosher salt and let cool on a paper towel-lined plate. 

  5. Add the drained pasta, 1/2 of the bacon and sausage mixture, and 3 Tbsp of olive oil into the skillet. Fold ingredients gently to mix. Top with remaining bacon and sausage, fresh chopped basil, grated parmesan, cracked black pepper, and homemade breadcrumbs. Enjoy!
