Creamy Cauliflower Mash

This is a fantastic substitute for mashed potatoes when you’re feeling like you want something a little healthier. Loaded with great flavor, these can turn even the biggest cauliflower haters into lovers! Enjoy as a side dish to compliment your favorite grilled summer proteins!

Makes enough for 4 people as a side dish.

Prep Time: 10 minutes

Total Cook Time: 15 minutes

Ingredients:

  • 1 head of cauliflower, cut into similar size florets

  • 1 yukon gold potato, peeled and cut into large cubes (this is the secret to getting a thicker texture that mashed potato lovers crave!)

  • 1 tbsp cream cheese (dairy free cream cheese like this also works!)

  • 1/2 tbsp salt, plus more for salting the boiling water

  • 1 tsp garlic powder

  • 2 tsp butter (vegan butter or ghee also works!)

Instructions:

  1. In a large stock pot, boil heavily salted water. Just like boiling water for pasta, most of this will be drained, yet the cauliflower and potato will be seasoned well during the process.

  2. Add cubed potatoes and cook for about 5 minutes, then add the cauliflower florets. Cook until both are fork tender, about 10 more minutes.

  3. Drain potatoes and cauliflower and add to a blender. Blend until smooth with 1/2 tsp of salt, cream cheese, garlic powder, and butter. Enjoy!
