Peanut Butter and Honey Banana Bread Muffins
All the nostalgic flavors you want in a cute little muffin! These are perfect for breakfast, a snack, or even dessert! Enjoy them warm right out of the oven, or for a meal prep that can last up to a week in the fridge!
Makes 6 Muffins

Ingredients:
For the Muffins
2 very ripe bananas, mashed
1 egg, beaten
3 tbsp butter, softened at room temperature
1/4 c honey
1/4 c creamy peanut butter
1/2 tsp salt
1/2 tsp ground cinnamon
1 tbsp baking powder
1/2 tsp baking soda
1 c all purpose flour
nonstick spray
For the Toppings
peanut butter
flaky sea salt
honey
fresh banana slices (only to be used when consuming immediately)
Instructions:
Preheat the oven to 375*F
In a large mixing bowl, mash the bananas, then mix in the egg, honey, butter, peanut butter, salt, cinnamon, baking powder, and baking soda.
Gently pour the flour in 1/2 c at a time and fold into the wet ingredients. Be careful not to overmix! Fold in the remaining flour.
Spray the muffin tins with nonstick spray, and then fill 6 cups about 3/4 full. This should fill about 6 muffin cups. Bake for 22 minutes and allow to cool. Top with peanut butter, sea salt, a drizzle of honey, and banana slices. Enjoy!
