Peanut Butter and Honey Banana Bread Muffins

All the nostalgic flavors you want in a cute little muffin! These are perfect for breakfast, a snack, or even dessert! Enjoy them warm right out of the oven, or for a meal prep that can last up to a week in the fridge!

Makes 6 Muffins

Prep Time: 10 minutes

Total Cook Time: 22 minutes

Ingredients:

For the Muffins

  • 2 very ripe bananas, mashed

  • 1 egg, beaten

  • 3 tbsp butter, softened at room temperature

  • 1/4 c honey

  • 1/4 c creamy peanut butter

  • 1/2 tsp salt

  • 1/2 tsp ground cinnamon

  • 1 tbsp baking powder

  • 1/2 tsp baking soda

  • 1 c all purpose flour

  • nonstick spray

For the Toppings

  • peanut butter

  • flaky sea salt

  • honey

  • fresh banana slices (only to be used when consuming immediately)

Instructions:

  1. Preheat the oven to 375*F

  2. In a large mixing bowl, mash the bananas, then mix in the egg, honey, butter, peanut butter, salt, cinnamon, baking powder, and baking soda.

  3. Gently pour the flour in 1/2 c at a time and fold into the wet ingredients. Be careful not to overmix! Fold in the remaining flour.

  4. Spray the muffin tins with nonstick spray, and then fill 6 cups about 3/4 full. This should fill about 6 muffin cups. Bake for 22 minutes and allow to cool. Top with peanut butter, sea salt, a drizzle of honey, and banana slices. Enjoy!
