Hot Honey Mustard Chicken Skewers

These chicken skewers have been a recent favorite in our household. They are really easy to make, and would be the perfect addition to your weeknight meals. I recommend that you use smaller skewers that you can fit inside of your pan. I bought wooden skewers at the store and cut them down to make them even shorter. I also recommend that you use a pan that can be used on the stove and in the oven, such as a cast iron skillet. My favorite pan is linked here.

Makes about 6 servings.

Prep Time: 20 minutes

Total Cook Time: 18 minutes

Ingredients:

For the Marinade

  • 1 1/2 lbs boneless skinless chicken thighs, cut into 1 inch pieces (If you substitute for chicken breasts, reduce the cooking time as they will dry out faster.)

  • 1 Tbsp kosher salt

  • 1/2 tsp black pepper

  • 1 tsp ground mustard

  • 2 Tbsp hot sauce (could be more or less, depending on how spicy the hot sauce is)

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

For the Sauce

  • 1/4 c honey

  • 1 Tbsp yellow mustard

  • 1 Tbsp dijon mustard

  • 1 Tbsp hot sauce (could be more or less, depending on how spicy the hot sauce is)

Instructions:

  1. Mix all marinade ingredients and marinade chicken in it for at least 30 minutes. Mix all sauce ingredients in a separate bowl, taste to adjust sweetness or heat to your liking, and set aside. After 30 minutes, thread the chicken pieces onto the skewers.

  2. Heat skillet to medium high and spray with a non-stick cooking spray. At the same time, Preheat your oven to 450*F.

  3. Add chicken skewers to the pan, and allow them to cook for about 4 minutes, until they are browned and lift easily from the pan. Flip the chicken skewers and cook for an additional 4 minutes.

  4. Pour the sauce into the skillet and move the chicken around to make sure it is well coated.

  5. Cook them in the oven for 10 minutes to finish. Enjoy!
