Chopped Antipasto Salad

If you ask me, there are few things better than a good plate of Italian food. I’m sure salad isn’t the first thing you’re thinking of, but this one truly captures all those delicious flavors. Even the dressing is to-die-for. You’re definitely going to want to make this one!

Makes 4 servings.

Prep Time: 15 minutes

Total Cook Time: 15 minutes

Ingredients:

For the salad

  • 2 hearts of romaine, chopped

  • 1 c radicchio, chopped

  • 4 stalks of celery, thinly sliced

  • 1/2 c sun dried tomatoes, chopped

  • 7-8 pepperoncini peppers, seeds removed and sliced into thin rings

  • 1/2 c marinated artichoke hearts, sliced

  • 3 slices of provolone, cut into 1 in. pieces

  • 1/2 c salami, cut into 1 in. pieces (for vegetarian, sub with chickpeas or white beans)

  • Optional: top with shaved parmesan cheese

For the dressing

  • 1/4 c olive oil

  • 1 Tbsp red wine vinegar

  • 1/2 Tbsp dijon mustard

  • 1 clove garlic, minced

  • 1/4 tsp kosher salt

  • 1/8 tsp pepper

  • 1/8 tsp oregano

  • 1/8 tsp red pepper flakes

  • 1/2 tsp honey

Instructions:

  1. Toss all salad ingredients in a large mixing bowl.

  2. Whisk dressing ingredients in a separate bowl.

  3. Top salad with dressing and toss to combine. Enjoy!
