Crispy Skillet Potatoes with Creamy Horseradish Dip

One of our favorite side dishes or appetizers to make for our friends! This dip is also so delicious spread on a juicy steak!

Serves: 4 People

Prep Time: 10 minutes

Total Cook Time: 25 minutes

Ingredients:

For potatoes

  • 1 bag of fingerling potatoes

  • olive oil

  • flaky sea salt

For dip

  • 1/2 cup Cashew Sour Cream

  • 2 Tbsp prepared horseradish

  • 1/2 tbsp dijon mustard

  • salt and pepper

Instructions:

  1. Preheat oven to 425* F.

  2. Cut fingerling potatoes in half lengthwise and set aside.

  3. In a large skillet, heat enough olive oil to cover the bottom of the pan.

  4. When the oil is hot, place potatoes cut side down in the pan and cook undisturbed until the edges brown to your liking.

  5. Transfer potatoes cut side up to a parchment lined baking sheet and place in the oven for 15 minutes.

  6. Sprinkle the potatoes while hot with flaky sea salt.

  7. Stir all dip ingredients in a bowl, or blend them in a blender. Serve alongside hot potatoes.
