Cashew Queso

With the superbowl coming up, we are all looking for new ideas for game day eats. This one will for sure be on our table! We love using this recipe to make other delicious creations too, like these Dairy Free Beef and Black Bean Enchiladas!

Serves: 6 People

Prep Time: 4 hours, 10 minutes (4 hours of that is for soaking the cashews)

Ingredients:

  • 2 c cashews, soaked in water for 4 hours (or soaked in very hot water for 30 minutes)

  • zest and juice of 1 lime

  • 1/2 packet of low sodium taco seasoning blend (about 1.5 Tbsp)

  • 1 Tbsp nutritional yeast

  • 1/2 cup plus 2 Tbsp fresh filtered water

  • 1 tsp salt

  • 1 tsp chili powder

  • 1/2 tsp cayenne pepper (feel free to add more if you want more heat)

Instructions:

  1. Soak the cashews for 4 hours in warm water. If you have a high-powered blender (like a Vitamix), you can soak them for less time.

  2. Rinse and drain cashews. Then, blend the cashew queso ingredients together until completely smooth. Taste and add more heat if you wish! I like to garnish mine with cilantro, extra cayenne pepper, and flaky salt.
