Peanut Butter Chocolate Chip Breakfast Cookies

We are obsessed with these to say the least.

Makes 6 - 8 Cookies

Prep Time: 5 minutes

Total Cook Time: 12 minutes

Ingredients:

  • 1 mashed banana

  • 1/2 c peanut butter

  • 1 1/2 c instant oats (old fashioned gluten free rolled oats work as well)

  • 1/2 tsp vanilla extract

  • 1/2 tsp sea salt

  • 2 tbsp coconut sugar

  • 1/2 c chocolate chips

Instructions:

  1. Preheat oven to 350*F.

  2. In a mixing bowl, mash banana, then add all additional ingredients. Mix until combined.

  3. Spray a baking sheet with non-stick spray, form “dough” into golf-ball sized pieces and flatten to create the cookies shape.

  4. Bake for 12 minutes. Allow the cookies to cool completely on a wire rack before enjoying! This is important so that they maintain their structure. Enjoy!
