Brown Sugar & Chipotle Spiced Chicken Breast

This is one of our favorite go to rubs! Perfect on chicken, short ribs, and salmon. The rub recipe makes enough for multiple dishes, so I love to save it in an extra jar in my spice cabinet!

Makes about 1/2 c of rub. Save extra rub in an airtight container.

Prep Time: 15 minutes

Total Cook Time: 15 - 18 minutes

Ingredients:

For the Rub

  • 1/2 c brown sugar (can sub coconut sugar)

  • 2 Tbsp chipotle powder (can sub chili powder)

  • 1/2 Tbsp garlic powder

  • 1/4 tsp paprika

  • 1/2 Tbsp onion powder

  • 1/2 tsp cayenne

  • 1/4 tsp oregano

  • 1 tsp kosher salt

  • 1/4 tsp black pepper

For the Chicken Breasts

  • 1/4 c kosher salt

  • 1 - 8 chicken breasts

Instructions:

  1. Preheat your oven to 450*F.

  2. In a large bowl, add warm water and dissolve 1/4 c kosher salt. Add chicken breasts and allow them to brine for at least 15 minutes. This step can be done up to a few hours ahead if refrigerated.

  3. Meanwhile, mix all rub ingredients.

  4. After chicken has brined for at least 15 minutes, drain and run under cool water. Dry with paper towels.

  5. Rub each chicken breast with olive oil, and 1-2 Tbsp of the rub.

  6. Cook in a baking dish for 15-18 minutes, or until chicken reaches an internal temperature of 165*F. Enjoy!
