Our Private Dining Experience with Chef Jimmi Sinh

We first met Chef Jimmi (Sushi Jimmi) while dining with friends at Saltwater Crab in Midtown. We knew that night that this chef was on to something special. His incredibly vibrant dishes, and attention to detail have ranked him top among Chefs in the Memphis area.

Fast forward a few months, those same friends planned a special evening where Chef Jimmi would come to their home to cook a few different sushi courses to us. Obviously we were in.

The night was planned with experimentation in mind, trying some of Jimmi’s favorite sashimi, nigiri, maki, and hand rolls. In addition to this, we also tried dishes on the menu for his new restaurant concept, J.T. Fusion (you can start booking reservations now!). He believes cooking is an art form, and focuses on the technical aspects of each dish, curating menus with quality in mind for his clients. He does not compromise when it comes to ingredients, and goes to great lengths to source the best (some of the fish was even flown in that morning from California). During your dining experience, he teaches you about the purpose behind each ingredient’s preparation, and how to properly eat it to experience it’s full potential. I was in awe of his culinary knowledge and talent and am excited to share this with you!

Chef Jimmi started our evening with a hand roll appetizer filled with fresh tuna, avocado, and sushi rice that he delicately brushed with a soy sauce flavored with freshly grated wasabi root.

He then continued our evening with prime cuts of yellowfin tuna, bluefin tuna, shrimp, scallops (from Japan), salmon, mackerel, octopus, and his personal favorite, toro (the fatty part of the tuna belly, that had marbling like the finest wagyu steak). Each fish was prepared and accompanied by ingredients that showcased it’s best qualities. His many years in professional kitchens, combined with his extensive knowledge of ingredients from cooking alongside his Mother, helps give his clients the true Sushi experience he feels this area of the country is lacking.

Chef Jimmi filled every space on his gorgeous custom wooden board with new and familiar flavors. It was a feast for the eyes, and every bite was better than the last. He excited our palates with every new addition to the magnificent spread. He loved sharing stories behind the dishes he was serving, including that his wife had made the sushi rice, a recipe she has been perfecting for over 10 years! I knew right away that this was different than any I had before. You could taste faint notes of lemon and vinegar, with a sweetness to balance it out. He even told us that the rice is flavored with yuzu, a citrus fruit common in Japanese cuisine. Chef Jimmi is as personable as it comes, and it’s the combination of his thoughtful flavors and stories that make his food so irresistible.

The final dish of the evening was a special one. One that he has been working hard on for J.T. Fusion, the sushi taco. He made some with steamed lobster, and others with spicy tuna. These were a huge hit amongst our crowd, and we will definitely be following him to his new restaurant to have them again. Chef Jimmy truly gave us a night we will never forget! I highly recommend hiring him to help fill your home with love and delicious food. This will be a culinary experience your friends will talk about forever.
