Tomato & Peach Caprese

A little twist on the classic Italian dish!

Makes enough for 6 people as an appetizer/side dish.

Prep Time: 10 minutes

Ingredients:

  • 3 large heirloom tomatoes, cut into slices

  • 2 peaches, cut into slices

  • Fresh basil leaves

  • Burrata

  • Flaky salt

  • Fresh cracked black pepper

  • Extra virgin olive oil

  • Balsamic glaze

Instructions:

  1. On a large plate, lay out a slice of tomato, top with two peach slices, then a basil leaf. Repeat steps, overlapping the previous ingredient, creating a ring shape.

  2. Add burrata to the center and cut open. Use a fork to spread throughout the center of the ring.

  3. Drizzle caprese with olive oil, smaller basil leaves, salt and pepper. Top everything with a drizzle of balsamic glaze. Enjoy!
